The Basics of Cooking Grass Fed Beef

Low and slow are the watch words when cooking grass-fed beef to juicy, tender perfection. Please remember that Cognito Farm grass-fed beef has been dry-aged and is very lean.  You may need to add a little oil or finely minced aromatic vegetables like carrots, onions and peppers to ground beef for juicier burgers, meatloaf or meatballs.  Larger roasts benefit greatly when they’re cooked using a wet method like braising, or browned and then cooked on low for hours in a crock pot or slow oven.

A minimum internal temperature of 160 degrees should be reached for any ground meat.  For steaks, you can cook to lower temps for rare and medium.  We don’t recommend well-done grass-fed beef steaks unless you’re creating a new sole for your shoes.  Watch it closely.  Let it rest for a few minutes after removing from the heat (the temp will increase during resting).  Enjoy!
