This simple and delicious dish has long been one of our favorite recipes, and has been adapted from a recipe by Alton Brown on the Food Network. Serve with a nice crusty loaf of bread for dipping in the oil and for spreading the softened garlic cloves on. It is wonderful how sweet and mild the whole cloves of garlic become when cooked this way.
Time: 10-15 minutes prep plus 1.5 hours cooking for a total of 1 hour, 45 minutes
One chicken, cut into 8 pieces (without back)
Salt and Pepper to taste
2 Tablespoons, plus 1/2 Cup Olive Oil
40 whole, peeled garlic cloves
10 sprigs fresh thyme
5-6 whole small red potatoes (optional)
Pre-heat oven to 350 degrees, season the chicken pieces with salt and pepper. Add two Tablespoons of the oil to a large skillet or frying pan over high heat and brown the chicken pieces on all sides. Add the garlic, thyme, 1/2 cup remaining olive oil (and potatoes if desired) to the pan. Cover and place in the oven to cook for 1 1/2 hours. Remove pan from oven, remove stems from thyme and let rest uncovered for 10 minutes before serving. Enjoy the house filling good aromas while cooking and enjoying this meal!
